I know I have mentioned this recipe before, but hey, it’s a Christmas/holiday classic for many years! I have LOVED these since I was a child, and the child within me still does 😉 ENJOY! (Feel free to adapt the recipe to your own healthy version! )
Russian Tea Cakes Cookies Recipe
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for rolling
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped nuts (walnuts or pecans)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Dough: In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy. Stir in the vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the chopped nuts.
- Shape the Cookies: Roll the dough into small balls, about 1 inch in diameter, and place them on ungreased baking sheets.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly browned. The tops should remain pale.
- Cool and Coat: Allow the cookies to cool for a few minutes, then roll them in powdered sugar while still warm. Let them cool completely and roll in powdered sugar again before serving.
Notes
- These cookies can be stored in an airtight container for up to a week.
- For added flavor, you can substitute almond extract for the vanilla.
