Healthy Chocolate Cream Pie Recipe

Ingredients

For the Crust:

  • 1 ½ cups almond flour
  • 2 tablespoons cocoa powder
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt

For the Filling:

  • 1 cup silken tofu, drained
  • 1/2 cup dark chocolate chips (70% cocoa or higher)
  • 1/4 cup almond milk (or any milk of choice)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

For Topping:

  • Coconut whipped cream (optional)
  • Dark chocolate shavings (optional)
  • Fresh berries (optional)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, melted coconut oil, honey (or maple syrup), and salt. Mix until crumbly and well combined.
  3. Press the mixture into a 9-inch pie pan evenly across the bottom and up the sides.
  4. Bake the crust for 10-12 minutes until lightly golden. Remove from the oven and let it cool.

Step 2: Make the Filling

  1. In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring in between until smooth.
  2. In a blender or food processor, combine the melted dark chocolate, silken tofu, almond milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until creamy and smooth.
  3. Pour the chocolate filling into the cooled crust and spread evenly.

Step 3: Chill

  1. Refrigerate the pie for at least 2 hours to set.

Step 4: Serve

  1. Once set, top with coconut whipped cream, dark chocolate shavings, and fresh berries if desired.
  2. Slice and enjoy your healthy chocolate cream pie! ENJOY!
