1/2 cup dark chocolate chips (70% cocoa or higher)
1/4 cup almond milk (or any milk of choice)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
A pinch of salt
For Topping:
Coconut whipped cream (optional)
Dark chocolate shavings (optional)
Fresh berries (optional)
Instructions
Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine almond flour, cocoa powder, melted coconut oil, honey (or maple syrup), and salt. Mix until crumbly and well combined.
Press the mixture into a 9-inch pie pan evenly across the bottom and up the sides.
Bake the crust for 10-12 minutes until lightly golden. Remove from the oven and let it cool.
Step 2: Make the Filling
In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring in between until smooth.
In a blender or food processor, combine the melted dark chocolate, silken tofu, almond milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until creamy and smooth.
Pour the chocolate filling into the cooled crust and spread evenly.
Step 3: Chill
Refrigerate the pie for at least 2 hours to set.
Step 4: Serve
Once set, top with coconut whipped cream, dark chocolate shavings, and fresh berries if desired.
