Simple Keto Dinner Recipes

Recipe 1: Garlic Butter Shrimp and Asparagus

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Cook the Asparagus: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the asparagus and sauté for about 5 minutes, until tender-crisp. Remove from the skillet and set aside.
  2. Sauté the Shrimp: In the same skillet, add the remaining butter and minced garlic. Cook for 1 minute until fragrant. Add the shrimp and paprika, and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.
  3. Combine: Add the asparagus back to the skillet and toss everything together to combine. Serve warm with lemon wedges on the side.

Recipe 2: Zucchini Noodles with Pesto Chicken

Ingredients:

  • 2 medium zucchinis, spiralized
  • 1 lb chicken breast, sliced
  • 1 cup pesto sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken slices with salt and pepper. Cook the chicken for about 5-7 minutes, until fully cooked and golden brown. Remove from the skillet and set aside.
  2. Sauté Zucchini Noodles: In the same skillet, add the spiralized zucchini noodles. Cook for about 2-3 minutes until just tender, stirring frequently.
  3. Combine: Return the chicken to the skillet and mix in the pesto sauce until everything is well combined and heated through.
  4. Serve: Plate the zucchini noodles and chicken, then sprinkle with grated Parmesan cheese before serving.
