Easy No-Bake Oatmeal Chocolate Chip Cookies

Ingredients

  • 2 cups rolled oats
  • 1 cup natural peanut butter (or any nut butter of your choice)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/2 teaspoon cinnamon (optional)
  • A pinch of salt

Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), vanilla extract, cinnamon (if using), and salt. Mix well until all ingredients are fully combined.
  2. Add Chocolate Chips: Fold in the dark chocolate chips until evenly distributed throughout the mixture.
  3. Form the Cookies: Using a tablespoon or your hands, scoop out the mixture and shape it into balls or cookie shapes. Place them on a parchment-lined baking sheet.
  4. Chill: Refrigerate the formed cookies for at least 30 minutes, or until they set.
  5. Serve: Enjoy your no bake, no flour, oatmeal dark chocolate chip cookies straight from the fridge! Store any leftovers in an airtight container in the refrigerator.
