Thumbprint Cookies with Chocolate Centers
Ingredients
- Cookies:
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- Filling:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon unsalted butter
Instructions
- Preheat Your Oven:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. - Make the Cookie Dough:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the vanilla extract. Gradually add the flour, cornstarch, and salt, mixing until just combined. - Shape the Cookies:
Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Use your thumb or the back of a spoon to make an indentation in the center of each ball. - Bake:
Bake in the preheated oven for 12-15 minutes, until the edges are lightly golden. Remove from the oven and let cool slightly on the baking sheet. - Prepare the Chocolate Filling:
In a small saucepan over low heat, melt the chocolate chips and butter together, stirring until smooth. Alternatively, use a microwave in 30-second intervals, stirring in between until melted. - Fill the Cookies:
Once the cookies are cool, spoon a small amount of the melted chocolate into each indentation. - Cool and Serve:
Allow the chocolate to set before serving. Enjoy your delicious thumbprint cookies!
