Healthy Dark Chocolate Chip Cookies

Indulge in these deliciously healthy dark chocolate chip cookies that are quick and easy to make. Perfect for the whole household, these cookies incorporate wholesome ingredients while retaining the rich chocolate flavor. (This recipe is dedicated to my family who all love chocolate!)

Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar (or brown sugar)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut oil (melted) or unsalted butter
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup dark chocolate chips (70% cocoa or higher)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, rolled oats, coconut sugar, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, vanilla extract, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dark chocolate chips.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
