Keto Chocolate Avocado Mousse

Ingredients:

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup low-carb sweetener (such as erythritol or stevia)
  • 1/4 cup almond milk (unsweetened)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Keto-friendly whipped cream for serving (optional)

Instructions:

  1. Blend Ingredients: In a blender, combine avocados, cocoa powder, sweetener, almond milk, vanilla extract, and salt. Blend until smooth and creamy.
  2. Taste and Adjust: Taste the mousse and adjust sweetness if needed by adding more sweetener.
  3. Chill: Transfer the mousse to serving bowls and refrigerate for at least 30 minutes before serving.
  4. Serve: Top with keto-friendly whipped cream if desired, and enjoy this rich and creamy treat!

Keto Coconut Macaroons

Ingredients:

  • 2 cups unsweetened shredded coconut
  • 1/4 cup low-carb sweetener
  • 1/4 cup almond flour
  • 3 large egg whites
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 80% dark chocolate for drizzling

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a bowl, combine shredded coconut, sweetener, almond flour, egg whites, vanilla extract, and salt. Mix until well combined.
  3. Shape Cookies: Use a tablespoon to scoop out the mixture and form into small mounds on a parchment-lined baking sheet.
  4. Bake: Bake for 15-20 minutes, or until the macaroons are golden brown.
  5. Cool and Drizzle: Allow to cool completely. If desired, melt dark chocolate and drizzle over the macaroons before serving.
