Oven Baked Egg Bites Recipe
Ingredients
- 8 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup milk (whole, skim, or any plant-based milk)
- 1 cup diced vegetables (spinach, bell peppers, mushrooms, etc.)
- 1/2 cup cooked meat (bacon, sausage, or ham – optional)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the Muffin Tin:
- Lightly grease a muffin tin with cooking spray or oil to prevent sticking.
- Mix the Ingredients:
- In a large mixing bowl, whisk together the eggs and milk until well combined.
- Stir in the shredded cheese, diced vegetables, and cooked meat (if using).
- Season with salt and pepper to taste.
- Fill the Muffin Tin:
- Pour the egg mixture into each muffin cup, filling them about 3/4 full to allow for rising.
- Bake:
- Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Cool and Remove:
- Allow the egg bites to cool for a few minutes before gently running a knife around the edges to release them from the tin.
- Serve:
- Enjoy warm, or let them cool completely and store in an airtight container in the fridge for up to 5 days.
Tips
- Feel free to customize your egg bites with your favorite ingredients and spices.
- These make for a great meal prep option; they can be reheated in the microwave for a quick breakfast.
I made these this morning with onions, red and green peppers and a lot of chedder cheese! YUM!
