Oven Baked Egg Bites Recipe

Ingredients

  • 8 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup milk (whole, skim, or any plant-based milk)
  • 1 cup diced vegetables (spinach, bell peppers, mushrooms, etc.)
  • 1/2 cup cooked meat (bacon, sausage, or ham – optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Muffin Tin:
    • Lightly grease a muffin tin with cooking spray or oil to prevent sticking.
  3. Mix the Ingredients:
    • In a large mixing bowl, whisk together the eggs and milk until well combined.
    • Stir in the shredded cheese, diced vegetables, and cooked meat (if using).
    • Season with salt and pepper to taste.
  4. Fill the Muffin Tin:
    • Pour the egg mixture into each muffin cup, filling them about 3/4 full to allow for rising.
  5. Bake:
    • Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the egg bites are set and lightly golden on top.
  6. Cool and Remove:
    • Allow the egg bites to cool for a few minutes before gently running a knife around the edges to release them from the tin.
  7. Serve:
    • Enjoy warm, or let them cool completely and store in an airtight container in the fridge for up to 5 days.

Tips

  • Feel free to customize your egg bites with your favorite ingredients and spices.
  • These make for a great meal prep option; they can be reheated in the microwave for a quick breakfast.

I made these this morning with onions, red and green peppers and a lot of chedder cheese! YUM!
